Sweet Potato Pie

Yield: 1 9" pie

Oven: 350° 55-60 minutes

1 lb. sweet potatoes
1/2 cup softened butter
1 cup white sugar
2 eggs
1/2 cup milk
1/2 teaspoon cinnamon
1 teaspoon vanilla extract
1 unbaked 9" pie crust


Peel and boil sweet potatoes until tender.

Drain and cool.

Combine all ingredients with a mixer on low setting.

Pour into unbaked pie shell and bake 55-60 minutes.
