Pecan Tarts
Yield: 5 dozen
Oven: 350° 20-30 minutes
Crust:
1 stick margarine
1 (3-ounce) package cream cheese
1 1/2 cups all-purpose flour
Filling:
1 stick margarine
1 cup sugar
2 eggs, unbeaten
1 teaspoon vanilla extract
1 cup chopped pecans
Crust:
Mix together margarine and cream cheese.
Add flour. Roll very thinly; cut with a biscuit cutter.
Place in mini muffin tins.
Filling:
Melt margarine. Add sugar, eggs, and vanilla.
Add nuts and mix well.
Put 1 teaspoon in each uncooked pastry.
Cook 20 to 30 minutes at 350°.
Freezes well.
